Roasted Lemon & Garlic Chicken

6 Tbsp olive oil – $1.05
Juice of 1 lemon – $0.33
3–4 gloves minced garlic – $0.15
1 tsp kosher salt – $0.02
1/2 tsp black pepper – $0.01
3/4 lb trimmed green beans – $1.11
4 new potatoes or 8 red potatoes, washed and quartered – $1.50
4 boneless chicken breasts – $5.33

1. Preheat oven to 450 degrees. Pour 1 tablespoon of olive oil in a 9×13 baking dish.

2. In a large bowl, combine the remaining olive oil, garlic, lemon juice, salt and pepper; add the green beans and toss to coat. Place beans on the bottom of the pan. Add the potatoes to the same mixture and toss to coat. Place the potatoes on top of the green beans but around the sides of the pan, leaving a space for the chicken to be placed in the center.

3. Add the chicken to the remaining mixture and toss to coat. Place chicken in the center of the pan with potatoes around. If there is any remaining mixture pour it across the chicken. Roast the dish for 50 minutes in the oven. Remove the chicken from the dish and set aside. Cover to keep warm. Place the dish back in the oven, allowing the potatoes and beans to cook until tender, about ten minutes. Remove from oven and serve.
