Honey Lemon Enchiladas

1/3 cup honey
1/4 cup lemon juice
1 tablespoon chili powder
1/2 teaspoon garlic powder
3 cooked chicken breasts
8-10 flour tortillas
3 cups shredded cheddar or Monterey Jack cheese
2 cups green chile enchilada sauce
1/2 cup heavy cream
1/2 cup sour cream

Preheat over to 350 degrees. Shred chicken up. Mix with honey, lemon juice, chili powder and garlic powder. Marinate for at least a 1/2 hour in the refrigerator. Spray a 9×13 pan with non-stick cooking spray. Mix enchilada sauce with both creams. Begin building the enchiladas by putting a generous spoonful of the chicken mixture in a tortilla topped with cheese and a spoonful of enchilada sauce mixture. Roll and place in pan. Roll up the remaining enchiladas. Spread the leftover enchilada sauce over the enchiladas and top with remaining cheese. Bake for 30 minutes or until cheese is bubbling. Remove from oven. I like to top my enchiladas with lettuce, tomatoes, sour cream and guacamole.

    Is this all the same as the lime you posted last year? Seems like it, but I tweeked it to make it my own way. The lime ones are awesome! We have them at least once a month and at Christmas last year we had a mexican dinner. I took these and they were such a hit, everyone ate them, loved them, and wanted more!
