<h3 style="text-align: left;"><span style="font-weight: normal;">Chocolate Chip Cookies</span></h3>
<p style="text-align: left;">1 cup butter (soften)<br />
1 cup sugar (can substitute Splenda)<br />
1 1/4 brown sugar (packed)<br />
2 eggs<br />
2 tsp. baking soda<br />
2 tsp. vanilla<br />
3 to 3 1/2 cups flour<br />
2 cups chocolate chips</p>
<p style="text-align: left;">Cream together butter, sugars, baking soda and eggs.  Add vanilla and mix well.  Add flour until its a thick cookie mixture.  Roll into balls on a greased cookie sheet and bake at 350 degrees for 12 minutes.  Let cool. Enjoy! Makes about 36 cookies</p>

<p>1 lb Hamburger<br />
Potatoes (peel)<br />
Carrots<br />
Yellow Onions<br />
Corn<br />
Lipton Onion Soup Mix<br />
Broccoli</p>
<p>Cut everything up into bite size pieces and throw into a bowl.  Add raw hamburger and season with favorite seasoning, (I use Lipton onion soup mix) and mix together.  Put about 2 cups of mixture into foil and add 1-2 small slices of butter on top (about 1/2-1 tsp or so),  roll the top,  then roll the sides so that it encloses the mixture.gt Repeat steps until all mixture is gone. Cook on a Barbecue on  med high for about 20 minutes or until all vegetables are soft. Enjoy!!! The best part about this recipe is no clean-up!!!</p>

<p>Mix together the first 5 ingredients.  Pour into a 9&#215;13 pan and sprinkle crushed Ritz crackers on top.  Bake 350 degrees uncovered for 30 minutes. Enjoy!!!</p>

<div>In a large bowl, cream together butter, sugar &amp; salt until light &amp; fluffy.  Add flour &amp; mix until just combined. Line a 9&#215;13 pan with parchment paper that hangs over the long sides.  Spray parchment paper &amp; sides with non-stick cooking spray. Press crust into the bottom of pan.  Bake at 350 degrees for 15-20 minutes or until just starting to turn golden.</div>

<div>8 egg yolks</div>

<div>In a medium bowl whisk together all ingredients &amp; pour over hot crust.  Return to oven &amp; cook for an additional 25-30 minutes.  Chill in the fridge while making the next layer.</div>

<div>2 8 oz. packages cream cheese, softened</div>

<div id="_mcePaste">1 lemon zest, grated</div>
<div id="_mcePaste">1 pint (about 25 whole) strawberries, hulled &amp; sliced</div>
<div>In a medium bowl, whip together all ingredients until thick &amp; fluffy.  Spread over cooled lemon curd layer.  Arrange the sliced strawberries over the top of the cream layer.  Place in the fridge to chill while making strawberry glaze.</div>

<div>1 pint strawberries, pureed in blender or food processor</div>

<div>In a medium pot, over medium heat, combine strawberries &amp; water.  In a small bowl, combine sugar &amp; corn starch.  Whisk sugar into strawberry mixture. Bring just to a boil, whisking constantly.  Spread over sliced strawberries.  Return to fridge to chill completely. Enjoy!</div>

<p style="text-align: center;">Were you lucky enough to get the KRAZY deal on strawberries at Safeway???  I hope so!  Here&#8217;s what I did with 15 baskets of strawberries that I bought for a total of  $4.95.  (Don&#8217;t worry, my store had a TON of strawberries for this sale!)  I made three batches of freezer jam with jars and lids I already had &#8211; 21 half pints.  It&#8217;s a great way to use some of those cheap ziplock containers we get all the time too!   I figured it cost me about $0.15 a jar for the strawberries.  When you factor in the cost of the pectin and sugar it ends up being about $0.60 a jar.  Krazy!!  So grab some pectin (I used Ball&#8217;s pectin for freezer jam) and make your family happy!  It took only a couple of hours to make the jam and it is delish-way better than store bought!</p>

<h3>Strawberry Freezer Jam</h3>
<p style="text-align: left;">4 cups crushed strawberries (I used 3  1 lb containers)<br />
1 1/2 cup sugar<br />
1 package Ball Freezer Jam Pectin<br />
Jars, Lids and Rings</p>
<p style="text-align: left;">Mix sugar and pectin together.  Add to crushed strawberries and stir for 3 minutes.  Ladle into containers and let set for about 30 minutes then freeze and enjoy!  Easy, peasy, huh??</p>

<p style="text-align: center;">I froze the rest of my strawberries whole.  I just cut off the green stems, put them on a cookie sheet and froze them whole.  Then I put them in freezer bags.  The best thing is that they won&#8217;t stick all together now and I have them set for smoothies, jello, etc.  <a href="http://www.wikihow.com/Freeze-Strawberries">Here&#8217;s</a> a good source for different ways to freeze strawberries.</p>

<p style="text-align: left;">Combined all ingredients together and mix until well blended. Roll dough into little balls ( about the size of a quarter) and place on cookie sheet.  Bake at 400 degrees for 7-8 minutes.  Let cool.</p>

<p style="text-align: left;">3 cups powder sugar<br />
4 oz soften cream cheese<br />
2 tbsp milk<br />
1 tsp vanilla<br />
1/2 cup butter (melted)</p>
<p style="text-align: left;">Combine all ingredients and beat well. It&#8217;s always fun to use a little food coloring in the filling to make these a festive treat!</p>
<p style="text-align: left;">After the cookies have cooled, put the filling into the middle of two cookies and squish together until you have a Oreo!!! Repeat and enjoy!</p>

<h3><span style="font-weight: normal;"><span style="color: #008080;">Wacky Krazy Cake</span></span></h3>
<p>1 1/2 cups all purpose flour<br />
1 cup sugar<br />
1/4 cup cocoa<br />
1/2 tsp salt<br />
1 tsp baking soda<br />
1 tsp vanilla<br />
1 T white vinegar<br />
1/3 cup vegetable, peanut or light olive oil<br />
1 cup cold water, milk or chocolate milk</p>
<p>There are no mixing bowls to worry about, since the cake is mixed directly in the pan!  Just make sure your 8 or 9 inch pan is greased well with Crisco or vegetable shortening.</p>
<p>Measure the flour, sugar, cocoa, salt and baking soda into the pan.  Using a fork or mixing whisk, stir ingredients until no streaks remain and everything is well combined.  Scoop out three holes or valleys in the flour mixture.  Pour the vinegar into the first hole, the vanilla in the second, and oil in the third.  Pour the water or milk over everything and stir with fork or whisk until everything is well blended.  Don&#8217;t forget the corners of the pan and edges!</p>
<p>Bake at 350 degrees for 30-35 minutes.  Cool 5 minutes and cut into squares.  Serve while still warm with ice cream or cool whip.  Enjoy!</p>

<h3 style="text-align: left;"><span style="font-weight: normal;"><span style="color: #008080;">Sweet Lime Enchiladas</span></span></h3>
<div>4 chicken breasts, cooked &amp; shredded</div>
<div>1 12-15 oz. bottle salsa verde</div>
<div>1/3 cup honey</div>
<div>1/4 cup lime juice</div>
<div>1 TBSP chili powder</div>
<div>1 tsp garlic powder</div>
<div>1/4 tsp salt</div>
<div>1 cup heavy whipping cream</div>
<div>8-10 flour tortillas</div>
<div>5 cups shredded monterey jack cheese</div>
<div>In a large bowl; whisk together honey, lime juice, chili powder, garlic powder and salt.  Add shredded chicken to the lime mixture.  Let sit 10 minutes.</div>
<div>In a 9&#215;13 pan pour 3/4 of the salsa verde bottle to cover the bottom of the pan.  Set aside the remainder sauce.</div>
<div>Take a flour tortilla and fill with a couple tablespoons of  chicken and cheese.  Roll up and place seam side down in to the salsa verde pan.  Repeat process until all tortillas are filled.  After you have removed all of the chicken, there will be remaining lime sauce in the bowl.  Add the remaining salsa verde and heavy whipping cream to the lime sauce and mix.  Pour mixture over the filled enchilada and cover with remaining cheese.</div>
<div>Bake at 350 degrees for 30-40 minutes or until cheese is brown &amp; bubbly. Enjoy!!!</div>

<p>2 cubes (1 c.) butter<br />
1 1/2 cups sugar<br />
2 eggs<br />
2 tsp. vanilla<br />
2 cups flour<br />
2/3 cups cocoa<br />
1 tsp. baking soda<br />
1 c. crushed Cadbury Mini-Eggs</p>
<p>Heat oven to 350 degrees.  Beat butter, sugar, eggs and vanilla together until light and fluffy. Stir in the flour, cocoa and baking soda until the mixture has been combined.  Drop by tablespoon onto ungreased cookie sheet. Top with whole Cadbury mini eggs.  Bake 8-10 minutes and cool.  Enjoy!!!</p>

1 cup Shredded Parmesan<br />
1 cube butter (melted)<br />
1 packet of Ranch Dressing Mix</p>
<p>Preheat oven to 350. Mix together Corn Flakes, Parmesan and Ranch packet. Cut the chicken in half, dip the chicken in the melted butter then in the corn flake mixture and place into baking dish. Pour the remaining butter on top and bake for 45-50 minutes uncovered. Enjoy!!!</p>

Beat in water, cake mix &amp; vanilla. spoon into lined cupcake pans, filling about 2/3 full.  Bake at 350 degrees for 18-22 minutes.  Pour cream of coconut into a small bowl. Stir until all combined.  While cupcakes are still hot, poke a few holes into the top of the cupcake with the back of a wooden spoon. Spoon cream of coconut over each cupcake one tablespoon at a time (you might have to use your spoon to guide into the hole).</div>
<div>Let cool completely before decorating. When cooled, spread whipped cream onto the cupcake. Sprinkle with toasted coconut &amp; top with candy eggs.  Enjoy!</div>

<p>Dip chicken in yogurt, then into the crushed ritz crackers. Put into a 9&#215;13 baking dish and drizzle with melted butter.  Cook at 350 for 40 minutes. I love to add the Almond Rice as a side with this dish.</p>

<p>1/2 cube butter<br />
2 cups rice</p>
<p>Saute together and stir until rice is lightly brown Put into a 9 x 13 baking dish and add:</p>

2 tsp. salt<br />
1/2 tsp. pepper<br />
1 cup sliced or slivered almonds</p>
<p>Cover and bake at 350 for 1 hour. Enjoy!</p>

<p>1 sm box Raspberry Jello<br />
1 cup sugar<br />
1 cup water<br />
4 Tbsp corn starch<br />
2 cups powder sugar<br />
1 cup cream cheese or cooking cream<br />
1 tsp vanilla<br />
2 graham cracker crusts<br />
Fresh raspberries</p>
<p>In a saucepan on medium heat combine together sugar, water and cornstarch.  Continue stirring until mixture becomes a clear thick in form. Remove from heat. Add the Jello and let cool. In a separate bowl add together  powder sugar, cream cheese, vanilla and blend together until its smooth.  Put half the cream cheese mixture in one of the graham cracker crust and the other half in the other crust.  Do the same for the Jello mixture.  Sprinkle the raspberries on top and put into refrigerator for about 3-4 hours or until jello is set up. This recipe makes 2 Raspberry Pies!!! Enjoy!</p>

<p>3-4 lbs roast<br />
1 cup Coke or Pepsi<br />
1/2 cup beef  bouillon<br />
1 can cream of mushroom soup<br />
2 cloves garlic (minced)<br />
1 pkg Lipton onion soup mix<br />
Red Potatoes cut in half<br />
Carrots (baby)<br />
Onion (sliced)<br />
Mushrooms (sliced)</p>
<p>Put roast into the roasting pan.  Pour the coke  and beef bouillon over the roast. In a different bowl combine the cream of mushroom soup, Lipton onion soup mix and garlic then spread over the roast. Add the potatoes on the side of the roast and sprinkle the onions on top, then salt and pepper. Cook  at 350 degrees for about 2 hours.  After it has been cooking for 2 hours add the carrots and mushrooms and cook the remaining 2-2 1/2 hours or until roast is falling apart. Serve with mashed potatoes. You can thicken the gravy from the roast juices with a little rue (butter and flour paste mixture) and use that for your gravy for your mash potatoes. Enjoy!</p>

<p>2 Granny Smith apples<br />
2 packages refrigerated crescent rolls<br />
2 sticks butter<br />
1 1/2 cups sugar<br />
2 teaspoons vanilla<br />
1 cup (8 oz) Mountain Dew<br />
cinnamon</p>
<p>Peel and core apples. Cut apples into 8 slices each. Roll each apple slice in a crescent roll. Place in a 9 x 13 buttered pan. Melt butter, then add sugar and barely stir. Add vanilla, stir, and pour over apples. Pour Mountain Dew around the edges of the pan. Sprinkle with cinnamon and bake at 350 degrees for 45-55 minutes. Serve with ice cream and/or fresh whipped cream. Make sure to spoon some of the &#8220;special sauce&#8221; from the pan &amp; over the top. Enjoy!</p>

<h3><span style="font-weight: normal;"><span style="color: #008080;">Chicken Craisin Pasta</span></span></h3>
<p>12 oz box of penne pasta<br />
2-3 Cooked chicken breasts or roasted chicken from the deli, cut up<br />
6 T. butter<br />
1 c. whipping cream<br />
1/2 c. parmesan cheese, shredded<br />
¾ c. craisins<br />
2. C. spinach, optional</p>
<p>Cook the pasta until done. In a skillet brown butter, then add the whipping cream  and cook until sauce starts to thicken. Add parmesan cheese and simmer for about 1 minute.  Add sauce to the pasta. 1 can kidney beans<br />
1/4 c. taco seasoning<br />
1/2 c. green taco sauce<br />
1/2 c. french dressing<br />
green onions (chopped)<br />
shredded cheese<br />
avocados (diced)<br />
lettuce (chopped)<br />
cucumbers (chopped)<br />
tomatoes (diced)<br />
Doritos</p>
<p style="text-align: justify;">Brown hamburger and drain. Add the taco seasoning and kidney beans and mix together.  In separate bowl mix together the green taco sauce and french dressing (or you can use equal amounts of ketchup and mayo in replace of the french dressing).  Then you can create your own salads by putting together all your favorite toppings and then topping it with the dressing.  Enjoy!!!</p>

1 Tbsp vanilla<br />

1 1/2 tsp. baking soda<br />
1 1/2 tsp. baking powder<br />
3/4 c. buttermilk<br />
1/2 c. Nutella<br />
Nuts (optional)</p>
<p>Beat egg, butter, vanilla, sugar, nutella and banana. Add dry ingredients. Add buttermilk  and mix well. Stir in nuts, if desired. Put into a greased loaf pan. <p>1 butter cake mix<br />
2 Tbsp flour<br />
1/2 cup water<br />
3/4 cup vegetable oil<br />
4 eggs<br />
2/3 cup frozen sweetened sliced strawberry<br />
1 small box strawberry jello</p>
<p>In a large bowl combine cake mix, flour, water, oil &amp; eggs.  Beat with an electric mixer for 2 minutes.  Add frozen strawberries &amp; strawberry jello.  Beat well.   Pour into 2 greased &amp; floured 8 or 9 inch round cake pans.  Bake at 350 degrees for 35-40 minutes.  Cool 10 minutes in the pan &amp; the turn out &amp; cool completely on a wire rack.  Frost between layer, sides &amp; top of cakes with strawberry glaze.</p>

1/4 tsp. salt<br />
1/4 tsp. garlic salt<br />
dash of pepper<br />
1/2 cup low-fat cottage cheese<br />
4 oz. cream cheese, softened<br />
2 Tbsp. thinly sliced green onion<br />
2 Tbsp. chopped green pepper<br />
2 Tbsp. sour cream<br />
4 Tbsp. grated Parmesan cheese</p>
<p>Cook the noodles according to package directions.</p>
<p>Meanwhile, in a large skillet, cook beef and onion until meat is no longer pink; drain.  Remove from heat; stir in the tomato sauce, sugar, salt, garlic salt, and pepper. In a small bowl, combine  the cottage cheese, cream cheese, green onion, green pepper and sour cream.</p>
<p>Drain noodles; place half of the noodles in a greased 9&#215;13 baking dish. Spoon half of the beef mixture over the top. Layer with cottage cheese mixture and remaining noodles. Top with remaining beef mixture; sprinkle with Parmesan cheese.</p>
<p>Cover and bake at 350 degrees for about 20-25 minutes or until heated through.</p>

<div>3 cups grated carrots, steamed</div>
<div>1 cup crushed pineapple, drained</div>
<div>1 1/3 cup applesauce</div>
<div>2 3/4 cup sugar</div>
<div>6 eggs</div>
<div>1 tsp. vanilla</div>
<div>1 1/2 tsp. baking soda</div>
<div>1 1/2 tsp. baking powder</div>
<div>1 tsp. salt</div>
<div>2 tsp. cinnamon</div>
<div>3 cup flour</div>
<div>1 cup chopped nuts, plus more for top, if desired</div>
<div>Grate carrots &amp; steam in a zip &amp; steam bag. Place in mixing bowl. Add all wet ingredients &amp; sugar. Beat until well combined. Sift in all dry ingredients &amp; mix well. Stir in chopped nuts.  Batter will be very wet! (don&#8217;t worry, it&#8217;ll be fine) Pour batter into a greased &amp; floured 9&#215;13 glass baking dish or 2 9&#8243; rounds. Bake at 350° for 40-55 minutes or until toothpick comes out clean. Poke holes in cake &amp; pour hot caramel sauce over. Let cool &amp; top with cinnamon cream cheese frosting.</div>

<div>1/4 cup butter</div>
<div>1/4 cup brown sugar</div>
<div>3 TBSP heavy cream</div>
<div>1 tsp. vanilla</div>

<p>1 C. salsa<br />
1 C. brown sugar<br />
1 C. Coke or Sprite<br />
3 lbs. pork tenderloin, pork loin or other pork roast</p>
<p>Stir together salsa, brown sugar and 1 c soda. Pour over pork in crock pot. Cook on low for 8 hours. Shred meat for serving.</p>

1 C. loosely packed cilantro<br />
1/2 C. dry onion<br />
1 1/2 T. lime juice<br />
2 tbsp Chicken bouillon<br />
3/4 tsp. salt<br />
1 tsp. olive oil</p>
<p>Combine rice and oil in a sauce pan and brown the rice.  When rice is brown add 6 cups of water and let simmer on medium for about 2 minutes.  After the rice has been simmering for 2 minutes add the rest of the ingredients until the water has been cooked out.</p>
<h3 style="text-align: left;">Cilantro Ranch Dressing</h3>
<p>1 packet Hidden Valley Ranch Buttermilk dressing mix<br />
2 T. salsa verde<br />
dash of Tabasco<br />
1/2 bunch cilantro<br />
2 cloves garlic<br />
3/4 C. mayo<br />
3/4 C. sour cream<br />
1/2 C. buttermilk<br />
juice of 1 lime</p>
<p>Blend in blender until smooth.</p>
<p>Large tortillas<br />
Black or pinto beans<br />
Shredded lettuce</p>
<p>Layer tortillas with rice, beans, meat,  and dressing. I like to add shredded cheese as well. Serve as a burrito or as a salad.</p>

<h3><strong>Coconut Chex Mix</strong></h3>
<p>3 cups Corn Chex<br />
3 cups Rice Chex<br />
1/2 cup nuts (cashews, peanuts and/or almonds)<br />
1/2 cup shredded coconut<br />
1/2 cup light corn syrup<br />
1/2 cup butter<br />
1/2 cup white granulated sugar<br />
1/2 tsp vanilla</p>
<p>Combine Chex, nuts, and coconut in a large bowl. Set aside. Line a cookie sheet with wax paper. In a medium saucepan, combine the corn syrup, butter, sugar, and vanilla. Boil for 2 minutes, stirring occasionally. Take off heat, and pour over the Chex mix and stir until evenly coated. Spread out onto cookie sheet and let set for a few minutes. Enjoy! Store leftovers in baggies in a cool, dry place.</p>

<h3>Easy Peach Cobbler</h3>
<p>2-16oz cans sliced peaches<br />
1 pkg. yellow cake mix<br />
1/2 cup butter</p>
<p>Pour peaches in a 9&#215;13 pan. Sprinkle dry cake mix over the top of the peaches.  Dice butter and dot periodically over the cake mix.  Bake at 350 degrees for45 minutes or until golden brown. Serve with vanilla ice cream.</p>
