Chinese Chicken Salad

2 lbs Nappa cabbage – $2.00
5 greens onions, chopped – $0.50
3 packages ramen noodles, crushed – $0.60
1/4 cup butter – $0.25
1/4 cup sliced almonds – $0.37
1/4 cup sesame seeds – $0.31
3 chicken breasts- $3.00

Dressing

3/4 cup of peanut oil or 3 Tbls peanut butter plus 1/2 cup vegetable oil – $1.99
1/2 cup sugar – $0.15
1/4 cup rice vinegar – $0.42
2 Tbls soy sauce – $0.17

1. Grill chicken breasts in 2 tablespoons of olive oil and sprinkled with salt and pepper. Slice and set aside.

2. Wash and slice cabbage.

3. Melt butter in a sauce pan and add ramen noodles, sesame seeds and almonds. Cook and stir until everything turns light brown. If you want a healthy option you could also roast everything for 10 minutes at 375 degrees.

4. If you do not have peanut oil then place the peanut butter in the oil and stir.

5. In a small saucepan cook the peanut oil, sugar, rice vinegar, and soy sauce until it boils for one minutes. Set aside to cool.

6. When you are ready to serve mix the cabbage with the green onions; toss with ramen noodle mixture, dressing and chicken.
