California Chicken Spaghetti

1 (32 oz) box chicken broth – $1.98
1 package angel hair pasta – $1.00
2 Tbsp olive oil – $0.35
4 cloves garlic, minced – $0.25
2 boneless, skinless chicken breasts, cubed – $2.66
1 cup feta cheese, crumbled – $1.48
Large bunch fresh basil leaves, washed and chopped – $1.04
3 Roma tomatoes, diced or 1 cup sliced cherry tomatoes – $1.00

1. Fill a pot with chicken broth and bring to a boil; add pasta and cook to al dente.

2. Heat olive oil in saucepan. Add minced garlic and cook for one minute. Add chicken and cook through.

3. Drain pasta and toss with chicken mixture, feta, basil, and tomatoes. Serve immediately.

Serves: 6 to 8

    i’m guessing the pasta absorbs most of that chicken broth, so you probably don’t have much to drain.

    Do you reuse the broth?

      The pasta absorbs most of the chicken broth. Any leftover can be thrown out or you can use a little to put back into the pasta for added moisture.
