Oatmeal Chocolate Carmelita Bars

It’s hard not to think of baking as the days cool and the leaves start to change. Go buy yourself a new sweater to hide those autumn-induced love handles, then print this coupon, buy some Brach’s Milk Maid Caramels and let’s bake! $1.50/2 – Brach’s Bagged Products – (walmart.com)

Carmelitas

32 caramel squares, unwrapped
1/2 cup heavy cream
3/4 cup butter, melted
3/4 cup brown sugar, packed
1 cup flour
1 cup rolled oats
1 teaspoon baking soda
6 ounces semisweet chocolate chips

Preheat oven to 350. Unwrap and melt the caramels in a small saucepan with whipping cream. Stir continuously until smooth and melted. Set aside.

Combine the melted butter, oats, flour, brown sugar, and baking soda in a separate bowl. Put half of the oatmeal mixture in an 8×8 pan. You may want to use your hand to spread the mixture throughout the pan. And not just because it gives you an excuse to lick your fingers.

Bake for 10 minutes. Remove from oven and sprinkle the chocolate chips over the top. Pour the caramel mixture on top of the chocolate chips. Crumble the remaining oatmeal mixture over the caramel. Return the dish to the oven and bake another 15 to 20 minutes or until the sides are light brown.

Cool for a few hours at room temperature (willpower, woman!) or in the fridge if you’re in a pinch.

    I’ve got a similar recipe from my grandma, but instead of the candies and whipping cream she used half a jar of Smucker’s caramel (the ice cream topping) mixed with a tablespoon of flour–so I stock up on those when coupons come out. :)

    This recipe looks yummy! I’ll be making these this weekend. I wanted to note though that the Brach’s coupon is $1.00/2, not $1.50/2.
