Healthy & Delicious Pumpkin Turkey Chili

Take a break from that same old boring chili and mix it up with a bit of pumpkin puree. Don’t be surprised when this quickly becomes a family favorite! Pumpkin Turkey Chili

1 tablespoon vegetable oil – $0.02
1 medium chopped onion – $0.39
1/2 cup chopped green bell pepper – $0.40
1/2 cup chopped yellow or red bell pepper – $0.48
2 cloves garlic, minced – $0.08
1 pound ground turkey – $3.89
2 – 15 oz cans diced tomatoes – $1.36
2 generous cups pumpkin puree – $1.00
2  tablespoons chili powder – $0.22
1 teaspoon ground black pepper – $0.02
1 generous dash of salt – $0.01
1 – 3.5 oz can chopped green chilies – $0.65
1 – 15 oz can corn, drained – $0.68
1  - 15 oz can black beans, rinsed – $0.68
1/2 cup chopped cilantro – $0.11

Optional Toppings
Shredded cheddar cheese
Sour cream

Heat the oil in pot over medium heat, and saute the onion, peppers and garlic until tender. Stir in the turkey, cooking until brown. Season with chili powder, pepper, salt, and cilantro. Add all canned items and stir. Reduce heat to low, cover, and simmer 20 minutes. Serve topped with cheddar cheese, sour cream, avocado slices and tortilla chips.

    This sounds so good and wholesome – just the thing to prepare right before trick or treating. What size can of green chiles should I use – 4 oz. or 7 oz.?

    It’s awesome that you posted this cause I had been looking for a recipe for pumpkin chili today. So I made this one (but I made it with ground beef, it’s just what I had). OMG, it’s delicious! Thick and hearty and so filling. My kids (ages 1 and 3) devoured it!
