1. Healthy Rainbow Sandwiches
Make beets, spinach, carrots, and peas taste good to kids by cooking them first then blending them into cream or goat cheese.

Pop a few frozen chicken strips in the oven in the morning (or night before) and top each strip with a half slice of mozzarella and marinara sauce. Stick each strip in a dinner roll and you’re done!

If you have two sandwiches to prepare, make one with white bread and the other with wheat. Then use a cookie cutter to shape the center in each and swap them to get a white bread center in a wheat sandwich and vice versa.
10. Ham and Cheese Pocket Sandwiches
Cut rectangles in puff pastry dough and add spicy brown mustard, ham, and cheese before sealing with a second puff-pastry rectangle. Brush beaten egg along the edges and use a fork to seal before popping these babies in the oven. They’re wonderful hot, and just as tasty when served cold.

Hummus and pepper sandwiches?! Yup and they’re delicious — not to mention healthy. Trust me, your kids will ask for a repeat.

You’d think the lettuce and carrots in this PB&J sandwich would be a terrible addition, but they’re not. The jam and peanut butter masks the other veggies pretty well, which means you can sneak a serving of veggies in without your kids really caring.

Do your kids love sweet and salty, but are tired of PB&J? Try handing them a crisp apple and cheddar sandwich. Grill it for even more goodness.

Use Greek yogurt instead of mayo for a healthier recipe — your kids won’t even know the difference!
