Caprese Mac and Cheese
8 oz pasta shells – $1.00
2 Tbsp butter – $0.12
2 Tbsp flour – $0.04
1 1/4 cups milk – $0.24
1/2 cup cream – $0.37
1 1/2 cups grated mozzarella – $1.85
2 Roma tomatoes, diced – $0.34
3 Tbsp fresh chopped basil – $0.25
1. Cook pasta according to package directions and drain.
2. In a medium-size saucepan melt butter over medium heat. Add flour and cook, whisking constantly, for one minute. Slowly pour in cream and milk as you continue to whisk.
3. Increase heat to medium-high and continue whisking until mixture begins to boil. Reduce heat to low and add mozzarella cheese, stirring continuously until melted. Add salt and pepper to taste. Add cooked pasta and combine.
4. Let pasta rest for 2 minutes. Serve in bowls and top with basil and tomatoes.
