Lemon Crinkle Cookies

½ cup butter, softened – $0.50
1 cup granulated sugar – $0.30
½ tsp vanilla extract – $0.02
1 whole egg – $0.22
1 tsp lemon zest – $0.08
1 Tbls fresh lemon juice – $0.08
¼ tsp salt – $0.01
¼ tsp baking powder – $0.01
⅛ tsp baking soda – $0.01
1-½ cup flour – $0.29
½ cup powdered sugar – $0.15

1. Preheat oven to 350 degrees. Lightly grease cookie sheets with cooking spray.

2. In a large bowl, cream butter and sugar together until fluffy. Whip in vanilla, egg, lemon zest and juice.

3. Add salt, baking powder, baking soda, and flour. Scrap sides down and mix until everything is combined.

4. Pour powdered sugar onto a plate. Roll a heaping teaspoon of dough into a ball and then roll it in the sugar until covered. Place on the cookie sheet. Repeat with remaining dough.

5. Bake for 9 to 11 minutes until bottoms are lightly brown. Remove and let cool.
