Low-Calorie Double-Chocolate Muffins

1 3/4 cups oats – $1.26
3 egg whites – $0.33
1/2 cup unsweetened cocoa – $0.25
1 tsp vanilla extract – $0.03
1/2 cup plain Greek Yogurt – $0.33
1/2 tsp cream of tartar – $0.06
1 1/2 tsp baking powder – $0.04
1 1/2 tsp baking soda – $0.02
1/4 tsp salt – $0.01
1 cup hot water
1 cup sugar – $0.30
1/2 cup semi-sweet chocolate chips – $0.80

1. Preheat oven to 350 degrees. Line two 12-cup muffin tins with cupcake liners.

2. In a blender or food processor, mix all ingredients except chocolate chips. Be sure to blend mixture until oats are well ground. Gently stir in 1/4 cup semi-sweet chocolate chips.

3. Fill each muffin cup 3/4 full. Bake 10 minutes in preheated oven. Remove from oven and sprinkle 4-5 chocolate chips on top of each muffin. Bake 4-5 minutes more. Remove from oven and let cool.
