Perfect Peppermint Brownie Cookies

1 – 18 oz pkg brownie mix
1 1/4 cups all-purpose flour
1/4 cup packed brown sugar
1/4 tsp salt
2 large eggs
2 Tbls milk
1/2 cup butter, melted
1 tsp vanilla extract
3/4 tsp peppermint extract
1/2 cup crushed peppermint candy canes

Vanilla Cream Frosting

4 cups powdered sugar
1/2 cup butter, softened
6 Tbls heavy cream
1 tsp vanilla
1/4 tsp salt

1. Preheat oven to 350 degrees. Spray non-stick cooking spray on a cookie sheet.

2. In a large mixing bowl combine brownie mix with flour, brown sugar and salt.

3. Combine dry ingredients with eggs and milk. Add in melted butter, vanilla, peppermint extract and stir well.

4. Drop a heaping spoonful onto the greased cookie sheet. You should be able to make 12 on each pan. Bake for 10 minutes; cool completely before frosting.

5. To make frosting mix the butter for 1 minute until smooth. Add cream, powdered sugar, vanilla and salt. Mix well and spread on cookies. Top with crushed candy canes. Yields 36 cookies.
