Black Bean Quinoa Bowls
1 cup quinoa – $0.74
1/4 cup chopped fresh cilantro, divided – $0.06
1/4 cup fresh lime juice, divided – $0.33
1 Tbsp olive oil – $0.05
1 clove garlic, minced – $0.04
1/4 cup minced onion – $0.25
2 (15 oz) can black beans, rinsed and drained – $0.87
1/4 tsp chili powder – $0.05
Pinch of cayenne pepper – $0.01
Salt to taste

1. Rinse quinoa with water in a mesh strainer to remove any residue.
2. Combine quinoa with 2 cups of water in a small saucepan and bring to a boil. Cover and reduce heat to low. Let quinoa simmer 20 minutes or until water is absorbed. Stir in 2 tablespoons cilantro and 2 tablespoons lime juice. Remove from heat.
3. While quinoa is cooking, heat 1 tablespoon of oil in a medium saucepan. Add minced garlic and onion and saute until onions are clear. Add black beans, 1/2 cup water, 2 tablespoons cilantro, chili powder, and cayenne pepper. Bring to a boil, then reduce heat to medium low. Let simmer 15 minutes or until liquid is almost gone. Stir in 2 tablespoons lime juice and add salt to taste.
4. Divide the quinoa evenly into 4 to 6 bowls (depending on how many you are serving). Top quinoa with black bean mixture. Garnish with desired toppings and serve.
