Creamy Confetti Corn with Bacon

4 slices bacon, chopped – $0.63
1 (12 oz) package frozen corn – $1.89
1/4 cup onion, chopped – $0.12
1/4 cup red bell pepper, chopped – $0.31
1 (4 oz) package cream cheese – $0.62
2 Tbsp milk – $0.02
1/2 tsp sugar – $0.01
1/4 tsp salt – $0.01
1/2 tsp pepper – $0.01
2 green onions, finely chopped – $0.24


1. In a large pan, cook chopped bacon until golden and crisp. Remove from pan and place on paper towels to drain. Use additional paper towels to sponge off excess grease. Drain all but a thin layer of bacon grease from bottom of pan.

2. Add corn, onion and red pepper to the bacon pan. Cook over medium heat until vegetables are tender and onions are translucent, about 6 minutes. Add cream cheese and milk, stirring until cream cheese is melted.

3. Stir in sugar, salt and pepper. Add green onions. Top corn with bacon and serve.
