Chicken Pot Pie Soup

Directions for Soup:

1. In a large pot, melt butter over medium heat. Add onion and celery and saute 3 minutes.

2. Stir in flour and cook, stirring constantly, 1 1/2 minutes longer. While whisking, slowly pour in chicken broth and milk.

3. Add potatoes, carrots, parsley, thyme, rosemary and bay leaf and season with salt and pepper to taste.

4. Bring mixture just to a boil and stir constantly. Then reduce heat to medium-low and simmer until potatoes are tender (about 10 minutes). Stir often.

5. Stir in chicken, cream and lemon juice. Add peas and cook until heated through. Remove bay leaf and serve warm with biscuits.

Directions for Biscuits:

1. Preheat oven to 450 degrees. In a medium-sized mixing bowl, whisk together flour, baking powder, salt, pepper and garlic powder for 30 seconds.

2. Stir in Parmesan cheese. Using your fingertips, rub butter into mixture until evenly distributed and it comes together in pea-sized lumps.

3. Pour in milk and heavy cream and stir with a wooden spoon until just combined (batter should be lumpy and sticky). Drop about 1/4 cup of batter at a time onto a parchment paper-lined baking sheet.

4. Bake for 10 minutes or until light brown.
