This white chicken chili is an easy way to get dinner on the table and keep on track with your weight loss goals. Light and super simple to make, this dish is sure to become a regular on your menu rotation!

White Chicken & Lime Chili

2 Tbs olive oil
1 onion, chopped
3 cloves minced garlic
3 boneless chicken breasts, cubed
salt and pepper
3 cans Great Northern Beans, drained and rinsed
1 (3.5 oz) can green chilies
1 tsp cumin
1/2 tsp oregano
1/2 tsp salt
1/4 tsp pepper
1 (32 oz) box chicken broth
Juice of 1 lime
1/2 cup cilantro, chopped

Garnish

Sour cream
Avocado
Tortilla chips
Shredded cheese

1. Heat olive oil in a large pot. Add onion, garlic and chicken and sprinkle with salt and pepper. Cook until onions become translucent and chicken is cooked through.

2. Add beans to pot along with chilies, cumin, oregano, salt and pepper. Stir, then add chicken broth. Bring all ingredients to boil. Add lime juice and cilantro. Simmer 15 minutes. Serve with garnishes.
