BANANA RAISIN SCONES
1/2 cup raisins
2 Tbsp. hot water
2-1/2 cups flour
2 Tbsp. sugar
2 tsp. baking powder
1 tsp. baking soda
6 Tbsp. cold butter or margarine
1-1/2 cups Post Selects Banana Nut Crunch Cereal
1 container (6 oz.) vanilla low-fat yogurt
PREHEAT oven to 425°F. Mix raisins and water in small bowl; set aside. Mix flour, sugar, baking powder and baking soda in large bowl. Cut in butter with pastry blender or 2 knives until mixture resembles coarse crumbs. Stir in cereal. Beat egg in small bowl; stir in yogurt and raisins and their liquid. Add to flour mixture; stir until mixture forms soft dough. DROP dough by 1/4 cupfuls, 2 inches apart, onto greased baking sheets. BAKE 10 min. or until lightly browned. Serve warm.
CRUNCHY STUFFED FRENCH TOAST
1 cup fat-free milk
1-1/2 tsp. sugar
1/2 tsp. vanilla
1/4 tsp. salt
2 cups Post Selects Banana Nut Crunch Cereal
8 slices challah bread,
1/2 inch thick 2 oz. bittersweet baking chocolate,
finely chopped 1 large banana,
sliced 2 cups sliced strawberries
PREHEAT oven to 350°F. BEAT eggs, milk, sugar, vanilla and salt in large shallow dish with wire whisk until well blended; set aside. Place cereal in resealable plastic bag; seal bag. Crush cereal with rolling pin. Dip both sides of the bread slices in egg mixture; place on clean work surface. Sprinkle evenly with chocolate; top with bananas. Dip both sides of remaining 4 bread slices in remaining egg mixture; place over bananas to make four sandwiches. Press together gently. Coat both sides of sandwiches with cereal crumbs; press crumbs firmly into sandwiches to secure. PLACE on baking sheet. BAKE 20 to 25 min. or until lightly browned. Cut diagonally in half. Serve with the strawberries.

1 pkg. (15.5 oz.) Post Selects Banana Nut Crunch Cereal 1/2 cup flour
2/3 cup honey
6 Tbsp. butter
PREHEAT oven to 350°F. Line 13×9-inch baking pan with foil, with ends of foil extending over sides of pan; lightly grease foil. Set aside. Mix cereal and flour in large bowl; set aside. PLACE honey and butter in small saucepan. Bring to boil over medium-high heat, stirring constantly. Pour over cereal mixture; mix until evenly coated. Press firmly into prepared pan. BAKE 12 to 15 min. or lightly browned. Cool. Remove dessert from pan, using foil handles. Cut dessert into 32 bars. Store in tightly covered container at room temperature.
