If you have company in town, this is the perfect breakfast dish to serve. It’s also great if your family enjoys breakfast for dinner. Egg & Potato Breakfast Casserole
3/4 package cubed hash browns – $1.50
1/4 cup melted butter – $0.25
2 cups diced ham – $2.50
2 cups Colby Jack cheese – $2.50
8 eggs – $0.84
3/4 cup evaporated milk – $0.57
1 tsp Accent seasoning or salt & pepper – $0.02
1. Preheat oven to 350 degrees. Spray a 9×13 pan with cooking spray. Pour hash browns into the pan and then drizzle the butter over top. Bake in the oven for 20 minutes.
2. While potatoes are cooking, mix eggs with milk and seasoning.
3. Remove potatoes from oven. Top with diced ham and one cup of cheese. Pour egg mixture over top evenly. Top with one more cup of cheese. Bake for 30 minutes. Remove from oven and serve.
*You could also use bacon or sausage instead of ham in this dish.
