Too busy to cook this summer? Throw this recipe together in a Crock-Pot, and dinner will make itself!

Southwest BBQ Chicken

4 boneless, skinless chicken breasts – $5.32
1 green pepper, chopped – $1.00
1/2 white onion, chopped – $0.40
1 bottle barbecue sauce (I used Sweet Baby Ray’s) – $1.50
6 hoagie rolls – $1.50

Put first four ingredients in a crock pot. Cook on high for 4 hours. Shred chicken with fork and serve over hoagie buns or a bed of lettuce. Add cheese and other condiments if you desire.

Serves: 6-8
