Easy Philly Cheesesteaks

1 cup beef broth – $0.25
1 pkg onion soup mix – $1.00
1 lb thinly sliced deli roast beef – $5.99
1 medium white onion, sliced – $0.50
1 carton sliced mushrooms – $1.99
1 bell pepper, seeded and sliced – $1.00
4 oz cream cheese – $0.50
6 hoagie rolls – $1.50
12 slices provolone cheese – $2.50

1. Bring beef broth and onion soup mix to a boil. Add roast beef, reduce heat and simmer 5–10 minutes. Meanwhile, in a large skillet saute onion, mushrooms and pepper.

2. Remove beef from broth. Add beef and cream cheese to skillet. Saute until cream cheese is melted and all ingredients are well combined.

3. Divide beef mixture between hoagie rolls. Top with provolone cheese and place sandwiches open-faced on a large baking sheet.

4. Broil on high for about a minute or until cheese becomes bubbly and bread becomes slightly toasty. Remove from oven and serve immediately. Pour remaining broth into cups to serve as au jus dipping sauce.
