I love meals that don’t take a lot of time to prepare but still taste amazing. This is one of my favorites! Though it’s simple to make, it’s impressive enough for company.
Marinated Pork Tenderloin with Pan Sauce
1/2 cup olive oil – $0.56
1/3 cup soy sauce – $0.15
1/4 cup red wine vinegar – $0.26
1 lemon, juiced – $0.25
1 Tbsp Worcestershire sauce – $0.10
1/2 tsp pepper – $0.03
2 gloves garlic, minced – $0.08
1 lb pork tenderloin – $6
1/2 cup chicken broth – $0.45
1 Tbsp butter – $0.06
2 Tbsp pork marinade
1. Mix first 7 ingredients together in a small bowl to make marinade. Set aside 2 tablespoons of marinade for pan sauce. Place tenderloin into a Ziploc bag and add marinade. Zip bag and shake to thoroughly coat meat. Refrigerate 4 hours.
2. Remove tenderloin from refrigerator. Preheat oven to 350 degrees. In a hot skillet, sear each side of tenderloin for 2-3 minutes. Place in oven and cook 30-40 minutes or until meat has reached 160 degrees. Let rest 5 minutes before slicing.
3. While meat is resting, make pan sauce. Add chicken broth to same skillet used to sear meat, and scrape up brown bits left from tenderloin. Add butter and reserved marinade to pan. Stir until butter is melted. Let cook 5 minutes, stirring occasionally. Remove from stove and pour pan sauce over sliced meat.
