Take a break from that same old boring chili and mix it up with a bit of pumpkin puree. Don’t be surprised when this quickly becomes a family favorite!

Southwest Pumpkin Turkey Chili

1 Tbsp vegetable oil – $0.02
1 cup onion, chopped – $0.39
1/2 cup green bell pepper, chopped – $0.40
1/2 cup yellow or red bell pepper, chopped – $0.48
2 cloves garlic, minced – $0.08
1 lb ground turkey – $3.89
2 Tbsp chili powder – $0.22
1 tsp ground black pepper – $0.02
1 generous dash of salt – $0.01
1/2 cup cilantro, chopped – $0.11
2 (15 oz) cans diced tomatoes – $1.36
2 generous cups canned pumpkin puree – $1.00
1 (3.5 oz) can diced green chilies – $0.65
1 (15 oz) can corn, drained – $0.68
1 (15 oz) can black beans, rinsed – $0.68

Optional toppings:
Shredded cheddar cheese
Sour cream
Avocado

 

Directions:

1. Heat oil in a large pot over medium heat. Saute onion, bell peppers and garlic until tender.

2. Add turkey and cook until browned. Season with chili powder, pepper, salt and cilantro.

3. Add all canned items and stir. Reduce heat to low. Cover and simmer 20 minutes. Serve topped with cheddar cheese, sour cream, avocado slices and tortilla chips.
