Turkey Lettuce Wrap Tacos
1 lb lean ground turkey – $3.99
1 cup salsa – $0.50
1 Tbsp taco seasoning – $0.34
1 (15 oz) can corn, drained – $0.88
1 (15 oz) can black beans, rinsed and drained – $0.88
1 head of iceburg lettuce, washed – $1.00
Optional Toppings: low-fat plain Greek yogurt, sliced olives, avocados, guacamole
1. Cook turkey in large skillet with salsa and taco seasoning. Cook 8-10 minutes, breaking up turkey as it cooks. When turkey is fully cooked, remove from heat and add corn and beans.
2. Remove lettuce stem and pull off individual leaves to use as wraps. Put 1/2 cup of meat into each lettuce wrap and spoon on additional toppings. Roll up and enjoy!
