Greek Chicken Pitas

For Marinade:
1/4 cup olive oil – $0.34
2 Tbsp lemon juice – $0.16
2 tsp Dijon mustard – $0.05
2 cloves garlic, minced – $0.08
1/2 tsp sugar – $0.01
1/2 tsp oregano – $0.02
1/4 tsp salt – $0.01
1/4 tsp thyme – $0.02
1/8 tsp pepper – $0.01
1/2 cup pepperoncini – $0.44

4 boneless, skinless chicken breasts  – $4.40
6 pita shells – $2.00

Optional Toppings:
1 tomato, diced – $0.19
1 cucumber, peeled and diced – $0.39
1/2 cup feta cheese – $0.84
1 can sliced olives – $1.00

Directions

1. Mix all marinade ingredients together. Add chicken to marinade and let sit in a bowl or Ziploc bag for at least 4 hours in the refrigerator.

2. Remove chicken and slice into strips. Pour marinade and chicken in a medium saucepan. Cook over medium heat until chicken is cooked through. Stuff pita with chicken and toppings.
