Cadbury Mini Eggs are still cheap, so here is another fun and easy recipe to try for Easter.

Cadbury Egg Cookies

2 cubes (1 c.) butter
1 1/2 cups sugar
2 eggs
2 tsp. vanilla
2 cups flour
2/3 cups cocoa
1 tsp. baking soda
1 c. crushed Cadbury Mini-Eggs

Heat oven to 350 degrees.  Beat butter, sugar, eggs and vanilla together until light and fluffy. Stir in the flour, cocoa and baking soda until the mixture has been combined.  Drop by tablespoon onto ungreased cookie sheet. Top with whole Cadbury mini eggs.  Bake 8-10 minutes and cool.  Enjoy!!!

If you don’t like Cadbury Mini Eggs or it’s not Easter, you can try this recipe with white chocolate chips or Reese’s peanut butter chips.
