French’s brown mustard is free at Target, so here’s a great recipe  to help you use it up!

Chicken Marsala

1 1/2 lb chicken breasts cut in pieces – about 2″ or so
3/4 c chopped onion
1 lb cremini mushrooms chopped or sliced
1 cup dry marsala wine (can add more if you want)
8 oz marscarpone cheese
2 T chopped parsley
2 T extra virgin olive oil
5 T butter
2 T minced garlic
2 T brown mustard
12 oz fettuccine
salt and pepper

Sprinkle chicken with salt and pepper. Heat oil in a large skillet over high heat. Add chicken and brown 4 minutes per side. Transfer to plate and cool slightly. Melt 2 T butter over med-high heat in the same skillet. Add onion and saute 2 minutes. Add mushrooms and garlic and saute 12 minutes. Meanwhile, cook the fettuccine to al dente. Add wine and simmer 4 minutes, or until it no longer smells like alcohol. Stir in mascarpone and mustard. Return chicken to skillet and simmer over med-low heat until cooked and the sauce thickens – about 2 mintues. Stir in parsley and season with salt and pepper. Toss fettuccine with 3 T of butter and salt and pepper. Serve Chicken Marsala over fettuccine. Garnish with parsley.
