Safeway has a great price on pork this week, so here is a family favorite!
There are so many different variations of this amazing recipe and we want to hear what is your favorite variation?!

Rio Shredded Pork (From Keeping Up Cookbook)

1 C. salsa
1 C. brown sugar
1 C. Coke or Sprite
3 lbs. pork tenderloin, pork loin or other pork roast

Stir together salsa, brown sugar and 1 c soda. Pour over pork in crock pot. Cook on low for 8 hours. Shred meat for serving.

Lime Cilantro Rice

3 C. cooked white rice
1 C. loosely packed cilantro
1/2 C. dry onion
1 1/2 T. lime juice
2 tbsp Chicken bouillon
3/4 tsp. salt
1 tsp. olive oil

Combine rice and oil in a sauce pan and brown the rice.  When rice is brown add 6 cups of water and let simmer on medium for about 2 minutes.  After the rice has been simmering for 2 minutes add the rest of the ingredients until the water has been cooked out.

Cilantro Ranch Dressing

1 packet Hidden Valley Ranch Buttermilk dressing mix
2 T. salsa verde
dash of Tabasco
1/2 bunch cilantro
2 cloves garlic
3/4 C. mayo
3/4 C. sour cream
1/2 C. buttermilk
juice of 1 lime

Blend in blender until smooth.

Large tortillas
Black or pinto beans
Shredded lettuce

Layer tortillas with rice, beans, meat,  and dressing. I like to add shredded cheese as well. Serve as a burrito or as a salad.
