I love a warm chocolate chip cookie. But it’s swimsuit season, and to look my best I have to give up a few of my favorite foods. This is a healthy substitute that feeds my addiction without all of the calories! Use: $0.50/2 – Nestle Toll House Morsels – (verybestbaking.com) to save on chocolate chips.

Healthy Peanut Butter Oatmeal Cookies

2 ripe bananas, mashed – $0.56
1/3 cup reduced-fat peanut butter – $0.39
2/3 cup unsweetened applesauce – $0.42
1 tsp vanilla – $0.03
1/2 tsp salt – $0.01
1/2 tsp cinnamon – $0.04
Dash of nutmeg – $0.02
1 1/2 cup oats – $1.08
1/4 cup semi-sweet chocolate chips – $0.40
1/4 cup reduced-fat unsweetened shredded coconut, optional – $0.44

Directions:

1. Preheat oven to 350 degrees. Line a cookie sheet with parchment paper and set aside.

2. In a large bowl or mixer, mix together bananas, peanut butter, applesauce, vanilla, salt, and spices. Add in oats, chocolate chips and coconut. Mix until well combined.

3. Scoop about 2 tablespoons of dough and drop onto cookie sheet. Leave two inches between each cookie. Bake for 20-25 minutes. Cool slightly before serving.
