S’mores Cookies

2 1/2 cups flour – $0.26
1 tsp baking soda – $0.02
1/2 tsp sea salt – $0.01
1 tsp cinnamon – $0.08
11 Tbsp butter, softened – $0.50
1/2 cup sugar – $0.15
1 cup brown sugar – $0.28
2 eggs – $0.22
1 tsp vanilla – $0.02
1/2 cup semisweet chocolate chips – $0.60
1 cup mini marshmallows – $0.25
2 packages graham crackers, broken into squares – $1.22
3 regular sized Hershey bars, broken into pieces – $1.33

Directions:

1. In a medium bowl, whisk together flour, baking soda, sea salt and cinnamon until combined. Set aside.

2. Using an electric mixer, cream butter and white and brown sugar together until light and fluffy. Add eggs and vanilla and mix until combined.

3. On low speed, add flour mixture to butter mixture and mix until fully incorporated.

4. Fold in chocolate chips and marshmallows. Chill dough in refrigerator 1 hour.

5. Preheat oven to 375 degrees. Line 9″x13″ and 11″x17″ baking pans with parchment paper (if you don’t have these sizes you can use whatever you have). Break graham crackers in half to make them square shaped and place in bottom of pans.

6. Place 1 1/2 tablespoons dough on each graham cracker. Press down lightly with fingertips.

7. Bake 5 minutes, then remove cookies from oven. Place one chocolate bar piece on each cookie. Return cookies to oven and bake for another 5–7 minutes, or until the edges turn light brown. Cool 15 minutes and cut into squares.
