Better-than-Mix Pancakes with Homemade Maple Syrup

1 1/2 cups flour – $0.28
3 1/2 tsp baking powder – $0.25
1 tsp salt – $0.01
1 Tbsp sugar – $0.06
1 egg – $0.11
3 tsp melted butter – $0.18
1 1/4 cups milk – $0.27

Syrup

1 cup water
2 cups sugar – $0.60
1 tsp maple syrup extract – $0.58
2 Tbsp butter – $0.12

Directions:

1. Whisk all pancake ingredients together in a medium-size bowl.

2. Make pancakes by dropping 1/4 cup-size pancakes onto hot griddle or pan. When the batter starts to bubble, flip pancakes over. Cook one more minute and remove from heat.

3. To make syrup: heat water and sugar together in a small microwave-safe bowl. Cook on high for 3 minutes and stir. If sugar is not fully dissolved, heat in 30-second increments until dissolved. Add maple extract and butter until melted and well mixed.

4. Serve pancakes with butter and warm syrup.
