Here's a weekend tortilla breakfast bake recipe, a protein-packed egg cup snack, and the grocery deals to make both recipes even more affordable.

Weekend Tortilla Egg Breakfast Bake Recipe
On weekends when I don’t feel like standing over the stove, this tortilla egg bake is my go-to. It’s easy to customize with whatever veggies I have on hand and makes enough to feed everyone.
Ingredients (serves 6 - 8)

5 Mission Carb Balance or Zero Net Carb tortillas, torn to fit the bottom of the pan

8 Eggland’s Best eggs

½ cup cottage cheese (optional)
-
½ cup milk or dairy alternative of your choice
-
Salt and pepper
-
1 cup veggies of choice (spinach, bell peppers, onions, mushrooms)

Optional add-ins: cooked turkey sausage, black beans, salsa, cheese
Instructions

Preheat oven to 375°F. Lightly grease a 9×9 baking dish.

Layer tortillas across the bottom of the dish, slightly overlapping to fully cover the base.

Sprinkle veggies evenly over the tortillas (and protein or cheese if using).

In a bowl, whisk eggs, cottage cheese, milk, salt, and pepper until smooth.

Pour egg mixture over the tortilla base, making sure everything is evenly covered.

Bake uncovered for 30 - 35 minutes, or until the center is set and the edges are lightly golden.

Let cool 5 - 10 minutes, then slice and serve.
KCL TIP: You can lightly toast the tortilla layer before assembling, or bake uncovered the full time for a firmer base.
Single-Serve Egg Cup Snack Recipe
These are my favorite make-ahead option when everyone’s rushing out the door. Make a batch on Sunday, cool completely, and pop them into the freezer individually wrapped. In the mornings, microwave for 60 - 90 seconds and enjoy.
Ingredients (serves 6)

6 Eggland’s Best eggs

½ cup cottage cheese
-
6 Mission Carb Balance or Zero Net Carb tortillas

Salt and pepper

Optional add-ins: spinach, bell peppers, onions, salsa
Instructions

Preheat oven to 375°F. Grease a muffin tin.

Press one tortilla into each muffin cup to form a base.

Whisk eggs with cottage cheese, salt, and pepper.

Pour egg mixture into each tortilla cup.

Add veggies if using.

Bake 18 - 22 minutes, until set.
