Slow Cooker Au Gratin Potatoes
1/2 white onion, chopped – $0.22
2 cloves garlic, minced – $0.08
5 Tbsp butter – $0.30
3 Tbsp flour – $0.02
1/2 tsp salt – $0.01
2 cups milk – $0.38
2 cups shredded cheddar cheese – $2.48
4 large russet potatoes, peeled and sliced into 1/4 inch pieces – $1.10
1. In a small saucepan, saute onions and garlic with 2 tablespoons of butter. Cook until onions are clear and set aside.
2. In a medium saucepan, melt remaining butter over medium heat. Mix in the flour and salt, and stir constantly with a whisk for one minute. Stir in milk. Cook until mixture has thickened. Stir in 1 1/2 cups of cheese all at once and continue stirring until melted, about one minute.
3. Layer 1/3 of the potatoes in the bottom of the slow cooker. Spread half of the onion/garlic mixture on top. Pour 1/3 of the milk mixture over the first layer and repeat with remaining onion and garlic, 1/3 of potatoes and 1/3 of milk mixture. Add the final layer of potatoes and cover it with the remaining milk mixture. Top with 1/2 cup of cheese, salt and pepper, then cover. Cook for 4 to 5 hours on high and serve.
